Piskótatekercs (Jelly Roll Cake)
Ingredients:
- 4 eggs
- 4 tablespoons granulated sugar
- 4 tablespoons all-purpose flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1 pinch of salt
- 1/2 cup apricot jam or any other fruit jam
- 1 cup whipped cream
- Powdered sugar for dusting
Instructions:
- Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper and set aside.
- In a mixing bowl, beat the eggs and granulated sugar together until creamy and lightened in color.
- In a separate bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt.
- Gently fold the dry mixture into the egg mixture, being careful not to overmix.
- Transfer the batter onto the prepared baking sheet and spread it evenly using a spatula.
- Bake in the preheated oven for about 8-10 minutes until the cake is set and springs back when lightly touched.
- While the cake is still warm, invert it onto a clean kitchen towel dusted with powdered sugar.
- Carefully peel off the parchment paper and trim any crispy edges if necessary.
- Spread the apricot jam evenly over the surface of the cake, leaving a small border around the edges.
- Starting from one short end, carefully roll up the cake along with the towel. Allow it to cool completely in the rolled position.
- Once cooled, carefully unroll the cake and remove the towel.
- Spread the whipped cream evenly over the cake.
- Gently roll up the cake again, this time without the towel, starting from the same end.
- Transfer the rolled cake onto a serving platter and dust with powdered sugar before slicing and serving.
